蘇絲黃~ 手撕燻雞
手撕燻雞 (觀眾李清提供)
材料:雞一隻、普洱菜葉、片糖一塊、桂皮、草果、八角、薑兩片、酒、濃醬、油、糖、蒜泥、白醋、香油
做法
1. 把桂皮、草果、八角、薑、酒、濃醬油、糖煮半小時成為淡滷汁
2. 把雞下鍋汆水,再放進淡滷汁裡,蓋上鍋蓋用慢火煮,然後灒少許酒
3. 在鍋底舖鋁箔紙,放上片糖碎、普洱茶葉及蒸架,煮至冒煙後放雞燻八分鐘
4. 取出雞後待涼二十分,手撕雞肉、雞皮
5. 把濃醬油、糖、蒜泥、白醋、香油調勻成調味汁後即可蘸雞吃
