蘇絲黃~ 煎漢堡扒
煎漢堡扒
材料:免治牛肉半斤、豬肉 (肥) 四兩、洋蔥 一個
醃料:老抽、生抽、糖、生粉、水、油、胡椒粉各適量
獻汁:蠔油、老抽、?汁、糖、水、生粉、麻油、生抽、胡椒粉各適量
製法
1. 用醃料醃牛肉與豬肉至鬆軟 (醃肉過程中加入少許水能使其更鬆軟)
2. 將洋蔥切粒
3. 用油將洋蔥爆香,加入少許糖及老抽,鏟起
4. 將洋蔥加入已醃好的牛肉與豬肉中,拌勻,再搓成圓球狀,用大火煎香至兩面金黃,鏟起 (不能煮至半生熟,因為內含豬肉)
5. 將獻汁落鑊,加入漢堡扒回鑊,蓋上至熟即成
