蘇絲黃~ 乾蔥豆豉炒雞件
乾蔥豆豉炒雞件
材料:鮮雞(切件)一隻、乾蔥(原粒)十五粒、豆豉半碗、蒜頭(切碎)半碗、蛋白半隻
醃料一:生抽、老抽、糖 適量
醃料二:生粉、麻油、紹興酒 適量
製法
1. 雞件先以醃料一略醃十五分鐘,再加入醃料二醃製
2. 用刀柄將豆豉壓碎,再加入蒜蓉攪拌備用
3. 乾蔥去皮,原粒落鑊炸香盛起備用
4. 將雞件落鑊,炸至乾身,瀝乾油備用
5. 將蒜頭豆豉落鑊爆香,加入雞件及乾蔥粒,炒香即成
