蘇絲黃~ 片糖薰雞
片糖薰雞
材料:雞一整隻、薑一大棵、片糖一至二片
製法
1. 先將薑切粒,後加入鹽及紹興酒當醃汁待用
2. 將雞洗淨,用醃汁醃雞內外(最少醃半天,建議用保鮮紙包好放入雪櫃)
3. 醃好後,將雞蒸約二十分鐘
4. 將醃汁倒至碗內,隔走薑粒,然後將面層的油隔去待用
5. 在鑊內舖上錫紙,然後將片糖分成四至五塊,放在錫紙上
6. 用猛火於錫紙上蒸雞,用濕毛巾包住鑊蓋周邊,防止煙散掉
7. 蒸約十分鐘後,將毛巾除去,慢慢待煙散去後將雞拿出
8. 等約三十分鐘後斬開(這能防止雞皮脫掉),淋上薑汁即成
