蘇絲黃~ 涼拌豆腐
涼拌豆腐
材料 : 豆腐 兩磚、咸蛋三隻、皮蛋兩隻、香春菜半斤、蔥 (切粒)數條、麻油適量
製法
1. 將咸蛋和皮蛋煲熟 (咸蛋需時較長)
2. 除去皮蛋殼,切碎
3. 再除去咸蛋殼,將一整隻咸蛋和兩個咸蛋黃切碎
4. 將香春菜洗淨,除去頭部後切碎
5. 將兩磚豆腐打橫切開,一分為二,再將四格豆腐排成 "田" 字形放於碟上
6. 在對角的兩磚豆腐分別舖上香春菜和皮蛋,其餘兩格則分別放上咸蛋和蔥
7. 最後淋上麻油即成 (若當作冷盤食用,建議進食前才淋上麻油)
