蘇絲黃~ 薑蔥蟹
薑蔥蟹
材料:膏蟹一隻、肉蟹兩隻、薑 (切片)、蔥 (切段,約一吋長)、中國芹菜 (切段,約一吋長)、米粉
調味汁︰ 蠔油少許、糖少許、淡醬油少許、香油少許、雞湯約半碗、蟹黃、酒
製法
1. 用冷水泡米粉,再剪碎
2. 把蟹切件後上芡粉,略炸
3. 先把薑炒香,再下芹菜和蔥一起炒
4. 把蟹件下鍋,加調味汁,略炒一會
5. 先把蟹件上盤,留下湯汁在鍋子裡
6. 再加雞湯和大量蠔油炒米粉
