Green tea
muffin /cake
Ingredients
5 large eggs
1/3 cup
heavy cream
¼ cup
sour cream
1/3 cup
keto friendly sweetener
2
tablespoons Matcha green tea powder
1/3 cup
coconut flour
⅓ cup Almond flour
2
tablespoon unsalted butter
Directions
Line a
muffin pan with paper liners.
In a
small mixing bowl, combine the coconut flour, Almond flour and the matcha
powder.
In
another mixing bowl, whisk together the eggs, cream, a sweetener, and melted
butter until well-combined.
Add the
flour mixture from the small bowl to the egg mixture, and whisk together.
*Note: It’s fairly difficult to make these mixtures blend into batter, so you
may want to use an electric mixer. For this same reason, you should rinse out
your mixing bowl immediately after you’re finished with it.
Pour the
batter into the lined muffin tin.
Bake for
10-15 minutes or until a toothpick inserted into the middle comes out almost
dry.
