澳牛的炒蛋
澳牛的炒蛋蛋白及蛋黃的比例不是一比一的。
有次我拿了蛋白去做燉奶, 之後用2只蛋黃+1只蛋白加奶炒出來的感覺就似澳牛。
用中小火炒, 不斷翻蛋, 勿讓蛋過老, 那炒出來的會滑
